Day One: The Dough and the Butter Block
Start with the dough, which French bakers call the détrempe.
- Combine 500g bread flour, 10g salt, 75g sugar, and 7g instant yeast in a stand mixer bowl. Keep the salt and yeast on opposite sides until you add liquid. They can coexist, but direct contact slows the yeast unnecessarily.
- Add 300ml whole milk at 20°C and 30g unsalted butter, softened. Mix on low with the dough hook for 3 minutes, then medium for 4 minutes. You want a smooth, slightly tacky dough that clears the bowl sides. Do not over-develop the gluten here. You are not making a baguette.
