Slow Cooker vs Instant Pot: Which One Wins?

A slow cooker and an Instant Pot are not the same thing, even though the Instant Pot has a slow cooker setting. The slow cooker mode on an Instant Pot runs hotter and drier than a dedicated unit, which changes your results. What Each Machine Actually Does

Slow cooking earns its place with specific types of food. It is not a universal shortcut, and it is not right for every protein or vegetable. Here is where it wins.
- Collagen-heavy cuts. Chuck roast, short ribs, pork shoulder, oxtail, and lamb neck all need time to break down their connective tissue into gelatin. Six to eight hours on Low does this without drying the meat out. Pressure cooking can speed this up, but the texture is slightly different. Slow cooking produces a more yielding, pull-apart result with a silkier broth.
- Dried beans and legumes. A slow cooker handles dried beans beautifully. No soaking required if you cook on High for around five hours. When to Use Instant Pot Pressure Cook Mode
The pressure cooker function is the Instant Pot's real advantage. It is not just a faster slow cooker. It is a different technique that produces different results.
- Stock and bone broth. What takes 12 to 24 hours on the stove takes 3 to 4 hours in a pressure cooker. The high-pressure environment extracts collagen and minerals from bones faster than any other method. The result is rich, deeply flavored stock with excellent body.

Do not crowd the pot. You want a real crust to form, not steamed gray meat. After the meat comes out, deglaze with wine, stock, or water and scrape up the fond from the bottom of the insert. Liquid Levels: The Most Misunderstood Variable
Both machines handle liquid differently, and getting this wrong is the fastest way to ruin a dish.
Slow cooker: The lid traps steam and returns condensation to the pot. This means the liquid level at the end is almost the same as the beginning. You should start with less liquid than you think you need. For a 3 to 4 pound braise, 1 cup of liquid is usually enough. Instant Pot pressure cook mode: The pot requires a minimum of 1 cup of thin liquid to build enough steam for pressure. This is non-negotiable. However, the steam does not escape during cooking, so you also do not need more than about 1.5 to 2 cups for most braises unless you are making actual soup or stew. Excess liquid means you need to reduce after cooking, which adds time and steps.
A useful rule: in a pressure cooker, the liquid you add is the liquid you finish with, minus a small amount that stays as steam in the pot. Plan accordingly. If your sauce looks thin after pressure cooking, switch to sauté mode and reduce it on the stovetop setting for five to ten minutes before serving.
5 Common Mistakes to Stop Making
- Using the Instant Pot slow cooker setting on "Normal." It does not get hot enough for safe, consistent slow cooking. Always use "More" if you are slow cooking in an Instant Pot.
- Lifting the slow cooker lid. Every time you lift the lid, you lose 20 to 30 minutes of cooking time as the heat and steam escape. Put the lid on and leave it alone.
- Adding dairy early. Milk, cream, and sour cream break down over long, hot cooks. Add them in the last 30 minutes of a slow cook, or stir them in after pressure cooking is complete.
- Skipping the sauté step. Aromatics dumped raw into a slow cooker without any prior cooking can taste sharp and raw even after eight hours. At minimum, sweat your onions and garlic before adding them. If you have the time, sear the meat too.
- Ignoring the burn notice. If your Instant Pot throws a burn notice, it means something is scorching on the bottom of the pot. This almost always happens when there is not enough thin liquid, or when thick sauces or tomato paste are added without diluting them first. Add tomato paste and thick sauces on top of the liquid, not stirred into the bottom.
A Few Timing Benchmarks Worth Memorizing
Rather than hunting through recipes every time, it helps to have a mental map of how common ingredients behave in each machine.
- Chuck roast: 8 hours slow cooker Low, or 70 to 80 minutes Instant Pot high pressure with natural release
- Whole chicken: 4 to 5 hours slow cooker Low, or 25 minutes Instant Pot high pressure with natural release
- Dried chickpeas (unsoaked): 5 hours slow cooker High, or 40 minutes Instant Pot high pressure with natural release

These are starting points, not absolutes. The size and temperature of what you are cooking will shift these numbers. A 6-pound pork shoulder needs more time than a 3-pound one. Cold, straight-from-fridge meat needs more time than room-temperature meat. Build in a check and adjust from there.
Getting the Best From Both
The most experienced home cooks use both functions strategically. They use the Instant Pot's sauté mode to build a sear, then switch to slow cooker mode when they want that long, leisurely low-heat result on a day off. They switch to pressure cook mode when dinner needs to happen in under two hours on a weeknight. They treat the two modes as different tools that happen to live in the same appliance, not as interchangeable shortcuts.
If you only own one or the other, a dedicated slow cooker consistently outperforms the Instant Pot's slow cooker mode for true long braises. But an Instant Pot with its sauté and pressure cook functions is more versatile overall. Both are worth learning properly. The technique matters more than the machine.
